Ingredients
  

For the Rice

  • 2 cups jasmine rice

For the Chicken

  • 1 pound boneless, skinless chicken breasts, diced

For the Sauce

  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • ½ teaspoon crushed red pepper flakes (optional)

For the Vegetables

  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 small red bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Seasoning

  • to taste Salt and pepper

Instructions
 

  • Cook the jasmine rice according to package instructions.
  • In a skillet, heat vegetable oil over medium heat. Add diced chicken and cook until browned.
  • Add onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
  • Stir in pineapple, soy sauce, honey, rice vinegar, and red pepper flakes. Cook for an additional 5 minutes.
  • Serve the chicken mixture over rice and garnish with sliced green onions. Season with salt and pepper to taste.

Notes

You can use canned pineapple for convenience. Adjust the spice level by adding more or less crushed red pepper.
