Ingredients
  

  • 16 oz mushrooms white button mushrooms, cremini, etc.
  • 1.5 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 cup soda water or beer
  • ½ cup buttermilk or ½ cup milk + ½ lemon juiced OR 1 tablespoon vinegar
  • 1 egg
  • ½ tablespoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sweet paprika
  • ½ teaspoon black pepper
  • 4-6 cups vegetable oil or canola oil for frying
  • Handful of parsley to garnish

Instructions
 

  • Clean mushrooms and pat dry.
  • Mix flour, panko, salt, garlic powder, onion powder, paprika, and black pepper in a bowl.
  • In another bowl, whisk egg, buttermilk (or substitute), and soda water (or beer).
  • Dip mushrooms in the wet mixture, then coat with the dry mixture.
  • Heat oil in a deep pan to 350°F (175°C).
  • Fry mushrooms in batches until golden brown (3-4 minutes).
  • Drain on paper towels.
  • Garnish with parsley and serve hot.

Notes

  • Use fresh mushrooms for best texture.
  • Do not overcrowd the pan while frying.
  • Serve immediately for maximum crispiness.
