- 16 oz mushrooms white button mushrooms, cremini, etc.
- 1.5 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 cup soda water or beer
- ½ cup buttermilk or ½ cup milk + ½ lemon juiced OR 1 tablespoon vinegar
- 1 egg
- ½ tablespoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon sweet paprika
- ½ teaspoon black pepper
- 4-6 cups vegetable oil or canola oil for frying
- Handful of parsley to garnish
Clean mushrooms and pat dry.
Mix flour, panko, salt, garlic powder, onion powder, paprika, and black pepper in a bowl.
In another bowl, whisk egg, buttermilk (or substitute), and soda water (or beer).
Dip mushrooms in the wet mixture, then coat with the dry mixture.
Heat oil in a deep pan to 350°F (175°C).
Fry mushrooms in batches until golden brown (3-4 minutes).
Drain on paper towels.
Garnish with parsley and serve hot.
