Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes

For the Sauce

  • 1 jar pepperoncini peppers 16 ounces, drained and roughly chopped (reserve ¼ cup of the juice)
  • 1 medium yellow onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons extra virgin olive oil
  • ½ cup low-sodium chicken broth
  • ½ cup heavy cream
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon red pepper flakes or more, to taste
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 2 tablespoons chopped fresh parsley for garnish

For Serving

  • as needed cooked pasta or rice such as penne or rotini

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add the chicken and cook until browned and cooked through.
  • Add onion and garlic to the skillet. Sauté until the onion is translucent.
  • Stir in the pepperoncini peppers, chicken broth, heavy cream, Italian seasoning, red pepper flakes, salt, and black pepper. Simmer for 10 minutes.
  • Garnish with fresh parsley and serve over pasta or rice.
