These irresistible Peanut Butter Chocolate Chip Bites feature a buttery dough layered with a creamy peanut butter filling and melty chocolate chips. Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg optional
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ cup creamy peanut butter
  • ¼ cup powdered sugar
  • cups semi-sweet chocolate chips
  • 1 egg yolk mixed with 1 tablespoon water for brushing

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream butter, brown sugar, and granulated sugar until light and fluffy.
  • Add egg (if using) and vanilla extract; mix well.
  • Gradually mix in the flour to form a dough.
  • In a separate bowl, mix peanut butter and powdered sugar until smooth.
  • Roll out half the dough to ¼ inch thickness.
  • Spread peanut butter mixture over rolled dough and sprinkle chocolate chips evenly.
  • Roll out the second half of dough and place it on top. Press lightly to seal.
  • Cut into bite-sized squares and place on the prepared baking sheet.
  • Brush tops with egg wash.
  • Bake 12–15 minutes, until lightly golden on the edges.
  • Cool on wire racks before serving.

Notes

  • Chilling the dough before rolling makes handling easier.
  • Use a sharp knife or pizza cutter for clean, uniform squares.
  • Skip the egg for an egg-free version; the bites are still deliciously rich.
  • Great with a drizzle of melted chocolate or a sprinkle of sea salt on top.
  • Store in an airtight container for up to 5 days or freeze for up to 2 months.
