Ingredients
  

For the Base

  • 1 cup crunchy peanut butter
  • ¾ cup light brown sugar, packed
  • ½ cup unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ¾ teaspoons salt
  • ½ teaspoon baking powder

For the Topping

  • ¾ cup grape jelly or jam, or any other flavor
  • ½ cup salted peanuts, coarsely chopped

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a baking pan.
  • In a mixing bowl, combine the peanut butter, brown sugar, and butter. Mix until smooth. Add the egg and vanilla, then mix well.
  • In another bowl, whisk together the flour, salt, and baking powder. Gradually add this mixture to the peanut butter mixture, stirring until combined.
  • Spread half of the dough into the prepared baking pan. Layer with the jelly, then top with the remaining dough. Sprinkle chopped peanuts on top.
  • Bake for 25 minutes or until golden brown. Allow to cool before slicing into bars.

Notes

Store the bars in an airtight container at room temperature for up to a week.
