Ingredients
  

For the Cake

  • 1 ½ cups unsalted butter, softened
  • 2 ½ cups granulated sugar
  • 5 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup sour cream, room temperature
  • 2 teaspoons vanilla extract

For the Topping

  • 2 cups diced peaches, fresh or canned and drained
  • 1 ½ cups sliced peaches
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk or peach juice
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  • Gradually add the flour, baking powder, salt, and cinnamon. Mix until just combined.
  • Stir in the sour cream and vanilla extract until smooth. Fold in the diced peaches.
  • Pour the batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick comes out clean.
  • For the topping, combine sliced peaches, brown sugar, and cinnamon. Spread over the cake once it cools.
  • For the glaze, whisk together powdered sugar, milk or peach juice, and vanilla extract. Drizzle over the cake before serving.

Notes

Serve with whipped cream for added flavor.
