Ingredients
  

For the Cookies

  • 1 cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 each egg
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • cups flour
  • ½ teaspoon baking soda
  • ¼ teaspoon nutmeg
  • ½ cup diced dried peaches (or fresh, patted very dry)

For Rolling

  • to taste cinnamon sugar

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Beat in the egg, vanilla, cinnamon, and spices.
  • Gradually add the flour and baking soda, mixing until combined. Fold in the diced peaches.
  • Roll the dough into balls and coat them in cinnamon sugar. Place them on the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool before serving.

Notes

Store cookies in an airtight container for up to a week. You can substitute other dried fruits for variation.
