Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Beat in the egg, vanilla, cinnamon, and spices.
Gradually add the flour and baking soda, mixing until combined. Fold in the diced peaches.
Roll the dough into balls and coat them in cinnamon sugar. Place them on the prepared baking sheet.
Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool before serving.
Notes
Store cookies in an airtight container for up to a week. You can substitute other dried fruits for variation.
