For the Rolls

feta cheese, crumbled

cup
ricotta cheese
1
teaspoon
fresh thyme leaves (optional)
You can omit if desired.
For the Chili Honey
¼
cup
honey
½
teaspoon
red chili flakes
Adjust to taste.

phyllo pastry, cut in half lengthwise
This makes 12 sheets.

melted butter or olive oil
For brushing.
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, mix feta cheese, ricotta cheese, and thyme leaves until well combined.
Lay one sheet of phyllo pastry on a clean surface and brush it lightly with melted butter or olive oil. Place another sheet on top and brush again.
Cut the layered phyllo into strips. Place a spoonful of the cheese mixture at one end and roll it up, sealing the edges.
Repeat with the remaining phyllo and cheese mixture.
Place the rolls on a baking sheet and brush the tops with more melted butter or olive oil.
Bake for 15 minutes or until golden brown and crispy.
While the rolls bake, prepare the chili honey by mixing honey and red chili flakes in a small bowl.
Drizzle the chili honey over the baked rolls before serving.
Notes
These rolls are best served warm. You can substitute different herbs for the thyme.
