Ingredients
  

For the Rolls

  • 8 oz feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 teaspoon fresh thyme leaves (optional) You can omit if desired.

For the Chili Honey

  • ¼ cup honey
  • ½ teaspoon red chili flakes Adjust to taste.

phyllo pastry

  • 6 sheets phyllo pastry, cut in half lengthwise This makes 12 sheets.
  • ¼ cup melted butter or olive oil For brushing.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix feta cheese, ricotta cheese, and thyme leaves until well combined.
  • Lay one sheet of phyllo pastry on a clean surface and brush it lightly with melted butter or olive oil. Place another sheet on top and brush again.
  • Cut the layered phyllo into strips. Place a spoonful of the cheese mixture at one end and roll it up, sealing the edges.
  • Repeat with the remaining phyllo and cheese mixture.
  • Place the rolls on a baking sheet and brush the tops with more melted butter or olive oil.
  • Bake for 15 minutes or until golden brown and crispy.
  • While the rolls bake, prepare the chili honey by mixing honey and red chili flakes in a small bowl.
  • Drizzle the chili honey over the baked rolls before serving.

Notes

These rolls are best served warm. You can substitute different herbs for the thyme.
