Ingredients
  

For the Orzo

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups fresh spinach, roughly chopped
  • ½ cup grated Parmesan cheese
  • ½ teaspoon crushed red pepper flakes (optional)

Seasoning

  • Salt and freshly ground black pepper to taste

For Garnish

  • Fresh parsley, finely chopped for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté until softened.
  • Add the orzo pasta and stir to coat. Pour in the vegetable broth, bring to a boil. Reduce heat and simmer for 10 minutes.
  • Stir in the chopped spinach, grated Parmesan cheese, and red pepper flakes. Cook until the spinach wilts and the cheese melts.
  • Season with salt and black pepper to taste. Serve warm, garnished with fresh parsley.

Notes

You can adjust the amount of red pepper flakes based on your spice preference. This dish can also be served with additional Parmesan on top.
