Instructions
 

  • In a large pot, heat a little oil over medium heat. Add the diced chicken and cook until browned.
  • Add the onion, bell pepper, and garlic. Sauté until the vegetables are soft.
  • Stir in the rice, black beans, corn, chicken broth, salsa, chili powder, cumin, salt, and pepper.
  • Bring to a boil, then reduce heat to low. Cover and simmer until the rice is cooked.
  • Remove from heat and stir in the cream cheese and cheddar cheese until melted.

Notes

You can add more vegetables or spices based on your preference. Serve with fresh cilantro for added flavor.
