Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Seasoning

  • Salt and pepper to taste

For the Sauce

  • 1 tablespoon olive oil
  • 1 cup BBQ sauce
  • ½ cup honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika

For the Pasta

  • 3 cups chicken broth
  • 12 oz penne pasta

For the Topping

  • 1 cup shredded mozzarella cheese
  • ¼ cup Parmesan cheese, grated
  • Chopped fresh parsley, for garnish

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper, then add to the skillet. Cook until browned and cooked through.
  • Add BBQ sauce, honey, apple cider vinegar, Dijon mustard, garlic powder, and smoked paprika to the skillet. Stir to combine.
  • Pour in the chicken broth and bring to a boil. Add the penne pasta, stir, and reduce heat to a simmer. Cook until the pasta is tender.
  • Once the pasta is cooked, stir in the mozzarella and Parmesan cheese until melted. Garnish with fresh parsley before serving.

Notes

You can adjust the sweetness by adding more or less honey according to your taste.
