1lbboneless, skinless chicken breasts, cut into bite-sized pieces
Seasoning
Salt and pepper to taste
For the Sauce
1tablespoonolive oil
1cupBBQ sauce
½cuphoney
1tablespoonapple cider vinegar
1tablespoonDijon mustard
1teaspoongarlic powder
½teaspoonsmoked paprika
For the Pasta
3cupschicken broth
12ozpenne pasta
For the Topping
1cupshredded mozzarella cheese
¼cupParmesan cheese, grated
Chopped fresh parsley, for garnish
Instructions
In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper, then add to the skillet. Cook until browned and cooked through.
Add BBQ sauce, honey, apple cider vinegar, Dijon mustard, garlic powder, and smoked paprika to the skillet. Stir to combine.
Pour in the chicken broth and bring to a boil. Add the penne pasta, stir, and reduce heat to a simmer. Cook until the pasta is tender.
Once the pasta is cooked, stir in the mozzarella and Parmesan cheese until melted. Garnish with fresh parsley before serving.
Notes
You can adjust the sweetness by adding more or less honey according to your taste.
