Ingredients
  

For the Vegetables

  • 2 cups chopped bell peppers mixed colors
  • 1 large zucchini sliced
  • 1 large red onion sliced
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives

For the Dressing

  • 3 tablespoon olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup crumbled feta cheese optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large pan, combine the chopped bell peppers, zucchini, red onion, cherry tomatoes, and Kalamata olives.
  • Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and black pepper. Toss to coat all the vegetables.
  • Spread the mixture evenly in the pan and roast in the oven for about 20 minutes.
  • If using, sprinkle feta cheese on top before serving.

Notes

You can add other vegetables like eggplant or carrots if you like. Adjust seasonings to your taste.
