Heat olive oil in a skillet over medium heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and set aside.
In the same skillet, add garlic and sauté for 1 minute. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
Add the gnocchi to the skillet and stir to coat in the sauce. Cook for 3-5 minutes until gnocchi is heated through.
Slice the cooked chicken and return it to the skillet. Season with salt and pepper to taste. Garnish with chopped parsley before serving.
