One-Pan Creamy Garlic Chicken Gnocchi

Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts

For the Gnocchi

  • 1 pound potato gnocchi fresh or refrigerated

For the Sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley for garnish chopped

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and set aside.
  • In the same skillet, add garlic and sauté for 1 minute. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  • Add the gnocchi to the skillet and stir to coat in the sauce. Cook for 3-5 minutes until gnocchi is heated through.
  • Slice the cooked chicken and return it to the skillet. Season with salt and pepper to taste. Garnish with chopped parsley before serving.

Notes

This dish is great for a quick weeknight dinner. You can substitute chicken with shrimp for a different flavor.
