One-Pan Cowboy Butter Tortellini Steak Bites

Ingredients
  

For the Steak Bites

  • 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
  • 1 teaspoon Cajun seasoning (or to taste)
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt & black pepper to taste
  • 2 tablespoon olive oil

For the Cowboy Butter Sauce

  • 6 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon Dijon mustard
  • 2 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped

For the Pasta

  • 12 oz cheese tortellini (fresh or refrigerated)
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water

Instructions
 

  • In a skillet, heat olive oil over medium-high heat. Season steak cubes with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
  • Add steak to the skillet and cook until browned, about 5-7 minutes. Remove steak and set aside.
  • In the same skillet, melt butter and add minced garlic. Cook for 1-2 minutes until fragrant.
  • Stir in red pepper flakes, Dijon mustard, lemon juice, parsley, and chives.
  • Cook cheese tortellini according to package instructions. Reserve ½ cup pasta water before draining.
  • Add drained tortellini to the skillet with the butter sauce. Mix in the reserved pasta water and add the steak bites back into the skillet. Toss to combine.
  • Sprinkle with grated Parmesan cheese before serving.

Notes

You can adjust the spices to your liking. Add vegetables for extra nutrition.
