Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken thighs or breasts

For the Rice

  • 1 cup long-grain rice

For the Sauce

  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey

For the Vegetables

  • 1 cup mixed vegetables (frozen or fresh)

For the Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste Salt and pepper

Instructions
 

  • In a skillet, heat some oil over medium heat. Add the chicken and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook until browned.
  • Add the rice, chicken broth, BBQ sauce, honey, and mixed vegetables to the skillet. Stir well and bring to a boil.
  • Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and chicken is tender.
  • Fluff the rice and serve hot.

Notes

You can use any mix of vegetables you prefer. Adjust the level of BBQ sauce and honey to taste.
