For the Chicken and Rice

boneless, skinless chicken thighs or breasts

long-grain rice

chicken broth
For the Sauce

BBQ sauce
choose your preferred type

honey
Seasonings

teaspoon
garlic powder

teaspoon
onion powder

teaspoon
smoked paprika

salt and pepper
For the Vegetables

mixed vegetables
frozen or fresh
Chopped green onions or parsley
optional, for garnish
Instructions
In a large skillet, heat some oil over medium heat. Add the chicken and cook until browned on both sides.
Add the rice, chicken broth, BBQ sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked.
Stir in the mixed vegetables and cook for an additional 5 minutes.
Garnish with chopped green onions or parsley if desired, and serve.
Notes
You can use any type of BBQ sauce for this recipe. Adjust the seasonings to fit your taste.
