One-Pan Bold Honey BBQ Chicken Rice

Ingredients
  

For the Chicken and Rice

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth

For the Sauce

  • ½ cup BBQ sauce choose your preferred type
  • ¼ cup honey

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste salt and pepper

For the Vegetables

  • 1 cup mixed vegetables frozen or fresh
  • Chopped green onions or parsley optional, for garnish

Instructions
 

  • In a large skillet, heat some oil over medium heat. Add the chicken and cook until browned on both sides.
  • Add the rice, chicken broth, BBQ sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked.
  • Stir in the mixed vegetables and cook for an additional 5 minutes.
  • Garnish with chopped green onions or parsley if desired, and serve.

Notes

You can use any type of BBQ sauce for this recipe. Adjust the seasonings to fit your taste.
