Instructions
Preheat your oven to 350°F (175°C) and grease a baking dish.
In a mixing bowl, combine flour, sugar, baking soda, baking powder, salt, and cinnamon.
Add sour cream, vegetable oil, egg, and vanilla extract to the dry ingredients and mix until combined.
Fold in the chopped rhubarb gently into the batter.
For the topping, mix brown sugar, flour, cinnamon, and softened butter until crumbly.
Pour the batter into the prepared baking dish and sprinkle the topping over it.
Bake for 45 minutes or until a toothpick comes out clean.
Let it cool before serving.
Notes
