In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture into the bottom of a baking dish.
In another bowl, beat cream cheese until smooth. Gradually add powdered sugar, then heavy cream, vanilla extract, and pink food coloring. Mix until well combined.
Spread the filling over the crust and smooth the top. Refrigerate for at least 2 hours until set.
Top with whipped cream and sprinkles before serving.
