Ingredients
  

For the Cauliflower

  • 1 large head Cauliflower
  • 1 tablespoon Mild Tasting Oil See notes below
  • ¼ cup Mayonnaise
  • 1 teaspoon Chili Powder

For the Topping

  • ½ cup Cotija Cheese Crumbled
  • cup Fresh Cilantro
  • to taste Lime wedges

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Cut the cauliflower into florets, then toss with oil and chili powder.
  • Spread the cauliflower on a baking sheet and roast for 20 minutes until tender.
  • In a mixing bowl, combine mayonnaise, cotija cheese, and cilantro.
  • Once the cauliflower is done, top with the cheese mixture and serve with lime wedges.

Notes

This dish is best served fresh. Adjust chili powder to your taste for spiciness.
