Instructions
Preheat your oven to 400°F (200°C).
Cut the cauliflower into florets, then toss with oil and chili powder.
Spread the cauliflower on a baking sheet and roast for 20 minutes until tender.
In a mixing bowl, combine mayonnaise, cotija cheese, and cilantro.
Once the cauliflower is done, top with the cheese mixture and serve with lime wedges.
Notes
This dish is best served fresh. Adjust chili powder to your taste for spiciness.
