Ingredients
  

For the Salmon

  • 4 fillets salmon skin-on or skinless

For the Sauce

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • ¼ cup sun-dried tomatoes, chopped (oil-packed for best flavor)
  • ¼ cup heavy cream
  • ¼ cup chicken broth
  • ¼ cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions
 

  • Heat olive oil and butter in a skillet over medium heat.
  • Add salmon fillets and cook until golden brown, about 5-7 minutes per side.
  • Remove salmon and set aside. In the same skillet, add garlic and sun-dried tomatoes. Sauté for 2 minutes.
  • Pour in heavy cream and chicken broth. Stir in Parmesan cheese, thyme, and basil. Season with salt and pepper.
  • Return salmon to the skillet and let it simmer for 2-3 minutes.
  • Garnish with fresh parsley before serving.

Notes

Serve with rice or pasta for a complete meal.
