Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ¾ cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • ¼ cup mini chocolate chips optional
  • ¼ cup blueberries optional
  • ½ cup powdered sugar for glaze
  • 2 tablespoons maple syrup for glaze
  • 1-2 teaspoons milk for glaze

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  • In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix egg, buttermilk, vanilla, and melted butter.
  • Combine wet and dry ingredients, stirring until just mixed.
  • Fold in chocolate chips or blueberries if using.
  • Spoon batter into mini muffin cups, filling each halfway.
  • Bake for 10-12 minutes until golden and cooked through.
  • Cool slightly before removing from the pan.
  • For the glaze, whisk powdered sugar, maple syrup, and milk until smooth.
  • Drizzle glaze over poppers and serve warm.

Notes

  • Use a piping bag to easily fill mini muffin cups.
  • Replace buttermilk with ¾ cup milk mixed with 1 teaspoon vinegar if needed.
  • Store leftovers in an airtight container for up to 2 days.
