Ingredients
  

  • 1 package cornbread mix 8.5 oz
  • 1 cup sour cream
  • 1 can cream-style corn 15 oz
  • 1 can green chilies 4 oz, drained
  • 1 cup shredded cheddar cheese
  • ½ cup chopped cooked bacon
  • ½ cup diced green onions
  • 2 eggs
  • ¼ cup melted butter
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a baking dish.
  • In a large bowl, combine the cornbread mix, sour cream, cream-style corn, green chilies, cheese, bacon, green onions, eggs, and melted butter. Mix well.
  • Season with salt and pepper to taste.
  • Pour the mixture into the prepared baking dish.
  • Bake for 30 minutes or until golden brown and set.
  • Let cool slightly before serving.

Notes

You can customize this casserole by adding jalapeños or swapping the cheese for pepper jack.
