- 9 cups crispy rice cereal squares
- 1 cup powdered sugar
- ½ cup white chocolate chips
- ¼ cup butter
- 1 tablespoon lemon zest from about 1 lemon
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- Yellow food coloring optional
Place the crispy rice cereal squares in a large mixing bowl.
In a microwave-safe bowl, melt the white chocolate chips and butter in 30-second intervals, stirring until smooth.
Stir in lemon zest, lemon juice, vanilla extract, and food coloring if using.
Pour the lemon-chocolate mixture over the cereal and gently stir to coat evenly.
Place powdered sugar in a large resealable plastic bag.
Add coated cereal in batches to the bag, seal, and shake until coated with powdered sugar.
