Ingredients
  

  • 9 cups crispy rice cereal squares
  • 1 cup powdered sugar
  • ½ cup white chocolate chips
  • ¼ cup butter
  • 1 tablespoon lemon zest from about 1 lemon
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Yellow food coloring optional

Instructions
 

  • Place the crispy rice cereal squares in a large mixing bowl.
  • In a microwave-safe bowl, melt the white chocolate chips and butter in 30-second intervals, stirring until smooth.
  • Stir in lemon zest, lemon juice, vanilla extract, and food coloring if using.
  • Pour the lemon-chocolate mixture over the cereal and gently stir to coat evenly.
  • Place powdered sugar in a large resealable plastic bag.
  • Add coated cereal in batches to the bag, seal, and shake until coated with powdered sugar.
  • Spread coated cereal on wax paper or a baking sheet to cool for about 30 minutes.

  • Use fresh lemon zest for a bright, bold citrus flavor.
  • Store in an airtight container at room temperature for up to 5 days.
  • Add lemon extract for an even stronger lemon punch.
