  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon poppy seeds
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon lemon zest from about 2 lemons
  • 2 tablespoons fresh lemon juice

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a loaf pan.
  • In a mixing bowl, combine all-purpose flour, granulated sugar, baking soda, salt, and poppy seeds.
  • In another bowl, whisk together melted butter, eggs, buttermilk, lemon zest, and lemon juice.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

You can add a glaze by mixing powdered sugar with lemon juice for extra sweetness.
