Ingredients
  

For the Crust & Topping

  • 7 tablespoons unsalted butter softened to room temperature
  • ¾ cup light or dark brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour spooned & leveled
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup old-fashioned oats or quick oats not instant

For the Lemon Filling

  • 1 can full-fat sweetened condensed milk
  • 6 tablespoons lemon juice from about 2 lemons
  • 1 tablespoon lemon zest from about 1 lemon

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a baking pan.
  • In a mixing bowl, combine the butter, brown sugar, and vanilla. Mix well. Then add flour, baking powder, salt, and oats. Stir until combined.
  • Press half of the mixture into the bottom of the prepared pan to form the crust.
  • In another bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest. Pour this over the crust.
  • Sprinkle the remaining oat mixture on top of the lemon filling.
  • Bake for 25 minutes or until the top is golden. Allow to cool before slicing into bars.

Notes

These bars are best served chilled. You can add more lemon zest for extra flavor.
