Ingredients
  

For the Cookie Dough

  • ¾ cup butter, softened
  • cup confectioners' sugar
  • 1 teaspoon lemon juice
  • 1-¼ cups all-purpose flour
  • ½ cup cornstarch

For the Frosting

  • ¼ cup butter, softened
  • ¾ cup confectioners' sugar
  • 1 teaspoon grated lemon zest
  • 1 teaspoon lemon juice
  • 1 to 3 drops yellow food coloring, optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine softened butter and confectioners' sugar. Mix well.
  • Add lemon juice, all-purpose flour, and cornstarch. Stir until a dough forms.
  • Roll the dough into small balls and place them on a baking sheet.
  • Bake for 10 minutes or until the edges are lightly golden.
  • For the frosting, beat together softened butter, confectioners' sugar, lemon zest, lemon juice, and food coloring until smooth.
  • Spread the frosting on cooled cookies and serve.

Notes

You can adjust the amount of lemon juice to taste for more or less tartness.
