Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine softened butter and confectioners' sugar. Mix well.
Add lemon juice, all-purpose flour, and cornstarch. Stir until a dough forms.
Roll the dough into small balls and place them on a baking sheet.
Bake for 10 minutes or until the edges are lightly golden.
For the frosting, beat together softened butter, confectioners' sugar, lemon zest, lemon juice, and food coloring until smooth.
Spread the frosting on cooled cookies and serve.
Notes
You can adjust the amount of lemon juice to taste for more or less tartness.
