Instructions
In a mixing bowl, combine chia seeds, almond milk, lemon juice, lemon zest, maple syrup, and vanilla extract. Mix well.
If using, stir in Greek yogurt or coconut cream for added creaminess.
Let the mixture sit for about 5 minutes to allow the chia seeds to absorb the liquid and thicken.
Stir again, then cover and refrigerate for at least 2 hours or overnight before serving.
