  • 2 cups almond milk (or milk of your choice)
  • ¼ cup fresh lemon juice
  • Zest from 1 lemon lemon zest
  • 2-3 tablespoons maple syrup (or honey, to taste)
  • ½ teaspoon vanilla extract

Optional Add-ins

  • ¼ cup Greek yogurt or coconut cream for extra creaminess

Instructions
 

  • In a mixing bowl, combine chia seeds, almond milk, lemon juice, lemon zest, maple syrup, and vanilla extract. Mix well.
  • If using, stir in Greek yogurt or coconut cream for added creaminess.
  • Let the mixture sit for about 5 minutes to allow the chia seeds to absorb the liquid and thicken.
  • Stir again, then cover and refrigerate for at least 2 hours or overnight before serving.

Notes

You can adjust the sweetness by adding more maple syrup or honey as desired.
