  • 2 pieces chicken breasts cubed or sliced thin
  • 1 lb potato gnocchi store-bought or homemade

Vegetables

  • 2 cups baby spinach
  • 1 cup cherry tomatoes halved

Flavorings

  • 3 cloves garlic minced
  • 1 piece lemon zest and juice

Sauce Ingredients

  • 1 cup chicken broth
  • ½ cup heavy cream or coconut cream for dairy-free
  • 1 tablespoon olive oil
  • to taste Salt and black pepper
  • Fresh basil or parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chicken and cook until browned and cooked through.
  • Add garlic, cherry tomatoes, and spinach. Cook until spinach wilts.
  • Stir in chicken broth, heavy cream, lemon zest, and juice. Bring to a simmer.
  • Add gnocchi and cook until heated through. Season with salt and pepper.
  • Garnish with fresh basil or parsley before serving.

Notes

This dish can be made dairy-free by using coconut cream. Adjust seasoning according to your taste.
