For the Roast

chuck roast
Vegetables

carrots peeled and cut into chunks

onion sliced

garlic minced

fresh ginger minced
Sauces and Seasonings

soy sauce

gochujang Korean chili paste

brown sugar

rice vinegar

beef broth

Instructions
Place the chuck roast in the slow cooker.
Add carrots, onion, garlic, and ginger on top of the roast.
In a bowl, mix soy sauce, gochujang, brown sugar, rice vinegar, sesame oil, and beef broth.
Pour the mixture over the roast and vegetables.
Cover and cook on low for 6-8 hours or until the meat is tender.
Garnish with chopped green onions before serving.
Notes
This pot roast pairs well with steamed rice or noodles.
