Ingredients
  

For the Roast

  • 3–4 lbs chuck roast

Vegetables

  • 3 carrots peeled and cut into chunks
  • 1 large onion sliced
  • 5 cloves garlic minced
  • 1 tablespoon fresh ginger minced

Sauces and Seasonings

  • ¼ cup soy sauce
  • 2 tablespoons gochujang Korean chili paste
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 cup beef broth
  • 2 green onions chopped (for garnish)

Instructions
 

  • Place the chuck roast in the slow cooker.
  • Add carrots, onion, garlic, and ginger on top of the roast.
  • In a bowl, mix soy sauce, gochujang, brown sugar, rice vinegar, sesame oil, and beef broth.
  • Pour the mixture over the roast and vegetables.
  • Cover and cook on low for 6-8 hours or until the meat is tender.
  • Garnish with chopped green onions before serving.

Notes

This pot roast pairs well with steamed rice or noodles.
