- 500 g all purpose flour
- 250 g unsalted butter
- 250 g sugar
- 250 g almond flour
- 30 g vanilla sugar
- 2 eggs
- 2 teaspoon baking soda
- Salt to taste
- 30 g shaved almonds for topping
Preheat your oven to 180°C (350°F).
In a large bowl, cream the butter and sugar together until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Gradually mix in the all-purpose flour, almond flour, vanilla sugar, baking soda, and a pinch of salt.
Knead the dough until smooth.
Roll out the dough to about 1 cm thickness and cut into desired shapes.
Place the cookies on a baking sheet lined with parchment paper.
Sprinkle shaved almonds on top of each cookie.
Bake for 12-15 minutes or until golden brown.
Let cool on a wire rack before serving.
