- 1 cup 120g white whole wheat flour or gluten-free flour
- 1 teaspoon cornstarch
- ¾ teaspoon baking powder
- ¼ teaspoon salt
- 1 ½ tablespoon 21g unsalted butter or coconut oil, melted and cooled slightly
- 1 large egg white room temperature
- 1 ½ teaspoon vanilla extract
- ½ cup 96g coconut sugar
- 2 tablespoons 40g raspberry jam
- 2 tablespoons 40g blackberry jam
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, whisk together the flour, cornstarch, baking powder, and salt.
In another bowl, mix the melted butter or coconut oil, egg white, vanilla extract, and coconut sugar.
Combine the wet and dry ingredients until a dough forms.
Roll the dough into small balls and place them on the prepared baking sheet.
Use your thumb or a spoon to make an indentation in the center of each cookie.
Fill each indentation with raspberry or blackberry jam.
Bake for 10-12 minutes or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
