Ingredients
  

  • 1 cup 120g white whole wheat flour or gluten-free flour
  • 1 teaspoon cornstarch
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ tablespoon 21g unsalted butter or coconut oil, melted and cooled slightly
  • 1 large egg white room temperature
  • 1 ½ teaspoon vanilla extract
  • ½ cup 96g coconut sugar
  • 2 tablespoons 40g raspberry jam
  • 2 tablespoons 40g blackberry jam

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, cornstarch, baking powder, and salt.
  • In another bowl, mix the melted butter or coconut oil, egg white, vanilla extract, and coconut sugar.
  • Combine the wet and dry ingredients until a dough forms.
  • Roll the dough into small balls and place them on the prepared baking sheet.
  • Use your thumb or a spoon to make an indentation in the center of each cookie.
  • Fill each indentation with raspberry or blackberry jam.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

  • Use any jam of your choice for different flavors.
  • Store cookies in an airtight container for up to 3 days.
  • For gluten-free cookies, use a certified gluten-free flour blend.
