- 1 lb 450g boneless, skinless chicken breast or thighs, thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
- 3 tablespoon soy sauce use low sodium if preferred
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon brown sugar
- ¼ cup chicken broth or water
- 1 teaspoon toasted sesame oil
- 8 oz 225g lo mein noodles or spaghetti
- 2 tablespoon vegetable oil or peanut oil
- 4 cloves garlic minced
- 1 cup sliced bell peppers red, yellow, or green
- 1 cup shredded carrots
- 1 cup snap peas or snow peas
- 3 green onions sliced (reserve some for garnish)
- Optional: 1 teaspoon fresh ginger grated
Mix chicken with soy sauce, cornstarch, and sesame oil. Let marinate for 10 minutes.
Whisk together sauce ingredients: soy sauce, oyster sauce, hoisin sauce, brown sugar, chicken broth, and sesame oil.
Cook noodles according to package instructions. Drain and set aside.
Heat oil in a large pan over medium-high heat. Cook chicken until browned. Remove and set aside.
In the same pan, add garlic and ginger (if using). Stir for 30 seconds.
Add bell peppers, carrots, and snap peas. Cook for 2-3 minutes until crisp-tender.
Return chicken to the pan. Add noodles and sauce. Toss everything together.
Garnish with green onions and serve.
