Ingredients
  

  • 1 lb 450g boneless, skinless chicken breast or thighs, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 3 tablespoon soy sauce use low sodium if preferred
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon brown sugar
  • ¼ cup chicken broth or water
  • 1 teaspoon toasted sesame oil
  • 8 oz 225g lo mein noodles or spaghetti
  • 2 tablespoon vegetable oil or peanut oil
  • 4 cloves garlic minced
  • 1 cup sliced bell peppers red, yellow, or green
  • 1 cup shredded carrots
  • 1 cup snap peas or snow peas
  • 3 green onions sliced (reserve some for garnish)
  • Optional: 1 teaspoon fresh ginger grated

Instructions
 

  • Mix chicken with soy sauce, cornstarch, and sesame oil. Let marinate for 10 minutes.
  • Whisk together sauce ingredients: soy sauce, oyster sauce, hoisin sauce, brown sugar, chicken broth, and sesame oil.
  • Cook noodles according to package instructions. Drain and set aside.
  • Heat oil in a large pan over medium-high heat. Cook chicken until browned. Remove and set aside.
  • In the same pan, add garlic and ginger (if using). Stir for 30 seconds.
  • Add bell peppers, carrots, and snap peas. Cook for 2-3 minutes until crisp-tender.
  • Return chicken to the pan. Add noodles and sauce. Toss everything together.
  • Garnish with green onions and serve.

  • Use fresh garlic for the best flavor.
  • Adjust soy sauce to taste if using low sodium.
  • You can substitute vegetables based on preference.
