- 3 cups 360g all-purpose flour
- 1 cup 84g natural unsweetened cocoa powder
- 1 ½ cup 300g granulated sugar
- 4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 large eggs
- 1 ½ cup 360ml buttermilk
- ½ cup 118ml vegetable oil
- 1 teaspoon vanilla extract
- ⅔ cup 167g creamy peanut butter
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, whisk eggs, buttermilk, oil, and vanilla extract.
Pour wet ingredients into dry ingredients. Stir until just combined.
Add peanut butter and mix gently.
Fill muffin cups ¾ full with batter.
Bake for 18-20 minutes or until a toothpick comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack.
