- 2 tablespoons olive oil
- 1 small red onion thinly sliced
- 3 cloves garlic minced
- 2 ½ cups shredded roasted chicken
- ½ teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1 cup BBQ sauce
- 12 slices Havarti cheese
- ¼ cup butter
- 2 cloves garlic minced
- 2 teaspoons parsley minced
- 12 slices sourdough bread or sturdy white bread
Heat olive oil in a pan over medium heat. Add red onion and minced garlic. Cook until softened.
Add shredded chicken, paprika, Worcestershire sauce, and BBQ sauce. Mix well and cook for 3-5 minutes.
In a separate bowl, mix butter, minced garlic, and parsley to make the garlic butter.
Spread garlic butter on one side of each bread slice.
Place a slice of Havarti cheese on the unbuttered side of half the bread slices.
Top with BBQ chicken mixture and another slice of Havarti cheese.
Cover with the remaining bread slices, buttered side up.
Cook each sandwich in a pan over medium heat until golden brown and cheese is melted, about 3-4 minutes per side.
