Ingredients
  

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tablespoon sriracha sauce
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • ½ cup sliced cucumbers
  • ½ cup shredded carrots
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • Season chicken with salt and pepper.
  • Coat chicken in flour, then dip in beaten eggs, and finally coat with panko breadcrumbs.
  • Heat oil in a pan over medium heat and fry chicken until golden and cooked through, about 4-5 minutes per side.
  • Drain on paper towels.
  • Mix mayonnaise, sweet chili sauce, and sriracha in a bowl to make the Bang Bang sauce.
  • Assemble bowls with cooked rice, shredded lettuce, cucumbers, and carrots.
  • Top with fried chicken and drizzle with Bang Bang sauce.
  • Serve immediately.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F internally.
  • For extra crispiness, double-coat the chicken in breadcrumbs.
  • Adjust sriracha to control spiciness.
