Ingredients
  

  • 1 ½ pounds of boneless skinless chicken, diced into 1-inch pieces
  • 10 ounces of penne pasta
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • 1 tablespoon of olive oil
  • 3 tablespoons of butter
  • 2 teaspoons of minced garlic
  • 3 tablespoons of flour
  • 2 cups of chicken broth
  • 1 cup of heavy cream
  • 1 cup of grated parmesan cheese
  • 1 cup of sun-dried tomatoes well-drained
  • 1 teaspoon of paprika
  • 2 teaspoons of dried Italian seasoning
  • Fresh basil for garnish

Instructions
 

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • Season the diced chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and fully cooked. Remove from skillet and set aside.
  • In the same skillet, melt butter and sauté minced garlic until fragrant.
  • Whisk in flour to create a roux, then gradually add chicken broth while stirring.
  • Pour in heavy cream and stir until the sauce thickens.
  • Add parmesan cheese, sun-dried tomatoes, paprika, and Italian seasoning. Stir until cheese melts.
  • Return the cooked chicken to the skillet and mix well.
  • Toss in the cooked pasta and stir until fully coated.
  • Garnish with fresh basil and serve immediately.

Notes

  • Use gluten-free pasta for a gluten-free version.
  • Adjust seasoning to taste.
  • Store leftovers in an airtight container for up to 3 days.
