Instructions
Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
In a mixing bowl, combine flour, baking powder, and salt. In another bowl, cream the softened butter and sugar. Add eggs, honey, milk, and vanilla, mixing well. Gradually add dry ingredients, then fold in chopped peaches.
Fill cupcake liners about ⅔ full with batter. Bake for 20-25 minutes until a toothpick comes out clean. Let cool.
For the filling, mix softened cream cheese, sugar, egg yolk, and vanilla until smooth. Once cupcakes are cool, core out the center and fill with cream cheese mixture.
Top with peach slices, a drizzle of honey, and crushed graham crackers or streusel topping before serving.
Notes
Use ripe peaches for the best flavor. You can also experiment with different toppings.
