Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • ¼ cup honey
  • ¼ cup lime juice freshly squeezed is best
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin

For the Rice

  • 1 cup long-grain rice white or brown
  • 1 ¾ cups chicken broth or water

For the Topping

  • 1 ripe avocado diced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 1 lime cut into wedges for serving

Instructions
 

  • In a bowl, mix honey, lime juice, olive oil, minced garlic, ground cumin, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
  • Cook the marinated chicken on a grill or skillet over medium heat until fully cooked. In a pot, combine rice and chicken broth or water, and cook according to package instructions.
  • Once the rice is cooked, fluff it and mix in diced avocado, cherry tomatoes, red onion, and cilantro.
  • Serve the grilled chicken stacked over the avocado rice mixture, garnished with lime wedges.

Notes

You can add other vegetables or spices to the rice for extra flavor.
