In a bowl, mix honey, lime juice, olive oil, minced garlic, ground cumin, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
Cook the marinated chicken on a grill or skillet over medium heat until fully cooked. In a pot, combine rice and chicken broth or water, and cook according to package instructions.
Once the rice is cooked, fluff it and mix in diced avocado, cherry tomatoes, red onion, and cilantro.
Serve the grilled chicken stacked over the avocado rice mixture, garnished with lime wedges.
