Ingredients
  

For the Vegetables

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed

For the Glaze

  • 2 tablespoons olive oil
  • ¼ cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions
 

  • In a large pot, bring water to a boil. Add the carrots and green beans and cook for 5 minutes. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add the honey, lemon juice, cinnamon, nutmeg, salt, and pepper. Stir in the cooked vegetables and cook for an additional 5-10 minutes until glazed.
  • Garnish with chopped parsley before serving.

Notes

This dish can be served warm or at room temperature.
