In a large pot, bring water to a boil. Add the carrots and green beans and cook for 5 minutes. Drain and set aside.
In a skillet, heat olive oil over medium heat. Add the honey, lemon juice, cinnamon, nutmeg, salt, and pepper. Stir in the cooked vegetables and cook for an additional 5-10 minutes until glazed.
Garnish with chopped parsley before serving.
Notes
