Ingredients
  

For the Brownie Mixture

  • 9 tablespoon butter I like Kerrygold unsalted butter for this
  • 1 ¼ cups sugar
  • ¼ cup cocoa powder sifted to remove lumps
  • ½ teaspoon vanilla
  • 1 tablespoon red food coloring
  • teaspoon salt
  • ¼ teaspoon espresso powder
  • ½ teaspoon vinegar
  • 2 large eggs
  • ¾ cup flour I always use King Arthur all-purpose flour

For the Cheesecake Swirl

  • 9 oz cream cheese room temperature, about 70°F
  • 3 tablespoon sugar
  • ½ teaspoon vanilla
  • 1 large egg yolk

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking pan.
  • In a mixing bowl, melt the butter and mix in the sugar, cocoa powder, vanilla, red food coloring, salt, espresso powder, vinegar, and eggs. Stir in the flour until combined.
  • In another bowl, beat the cream cheese, sugar, vanilla, and egg yolk until smooth.
  • Pour the brownie mixture into the prepared pan. Drop spoonfuls of the cheesecake mixture on top and use a knife to swirl it together.
  • Bake for 25 minutes or until a toothpick comes out clean. Let cool before cutting into bites.

Notes

You can add chocolate chips to the brownie mixture for extra richness.
