For the Crust and Topping

For the Lemon Filling

sweetened condensed milk

sour cream (or plain yogurt)

egg yolk

freshly squeezed lemon juice

finely grated lemon zest

vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease a baking pan.
In a mixing bowl, combine the flour, oats, salt, baking soda, melted butter, brown sugar, and vanilla. Mix until crumbly.
Press half of the mixture into the bottom of the prepared pan. Bake for 10 minutes.
In another bowl, mix the condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla extract until smooth.
Pour the lemon filling over the crust and spread evenly.
Sprinkle the remaining crumb mixture on top of the filling.
Bake for an additional 15 minutes or until golden brown.
Allow to cool before cutting into bars.
Notes
For a more intense lemon flavor, you can add more lemon zest to the filling.
