Ingredients
  

For the Crust and Topping

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • ¼ teaspoon salt
  • ¾ teaspoon baking soda
  • 10 tablespoons unsalted butter, melted
  • ½ cup light brown sugar, packed
  • 1 teaspoon pure vanilla extract

For the Lemon Filling

  • 1 can sweetened condensed milk 14 oz
  • 2 tablespoons sour cream (or plain yogurt)
  • 1 large egg yolk
  • ¼ cup freshly squeezed lemon juice
  • 1 tablespoon finely grated lemon zest
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a baking pan.
  • In a mixing bowl, combine the flour, oats, salt, baking soda, melted butter, brown sugar, and vanilla. Mix until crumbly.
  • Press half of the mixture into the bottom of the prepared pan. Bake for 10 minutes.
  • In another bowl, mix the condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla extract until smooth.
  • Pour the lemon filling over the crust and spread evenly.
  • Sprinkle the remaining crumb mixture on top of the filling.
  • Bake for an additional 15 minutes or until golden brown.
  • Allow to cool before cutting into bars.

Notes

For a more intense lemon flavor, you can add more lemon zest to the filling.
