Ingredients
  

For the Bread Dough

  • 1 ¾ cups warm water 105-115°F
  • 2 teaspoon sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 teaspoon salt
  • 6 tablespoon olive oil divided

For the Filling

  • 1 jar raspberry preserves Bonne Maman or similar

For the Glaze

  • 2 cups confectioners’ sugar
  • 2-4 tablespoon whole milk or as needed for consistency

Instructions
 

  • In a mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for 5-10 minutes until frothy.
  • Add bread flour, all-purpose flour, salt, and 4 tablespoons of olive oil to the yeast mixture. Mix until a dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
  • After rising, preheat your oven to 375°F. Roll out the dough on a baking sheet.
  • Spread raspberry preserves evenly over the dough.
  • Bake for 25 minutes or until golden brown. Let cool.
  • Mix confectioners’ sugar and enough milk to create a glaze. Drizzle over the cooled focaccia before serving.

Notes

You can substitute the raspberry preserves with other flavors as desired. Adjust milk for glaze consistency.
