Ingredients
  

For the meatballs:

  • 1 pound ground beef or turkey
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For the stew:

  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 4 cups beef broth
  • 1 can 14.5 oz diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Mix all meatball ingredients in a bowl until well combined.
  • Shape the mixture into small meatballs.
  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook until softened.
  • Add meatballs and cook until browned.
  • Pour in beef broth and diced tomatoes.
  • Season with thyme, paprika, salt, and pepper.
  • Simmer for 20-25 minutes until meatballs are cooked through.
  • Garnish with fresh parsley before serving.

Notes

  • You can use ground turkey instead of beef for a lighter version.
  • Freeze leftovers for up to 3 months.
  • Serve with crusty bread for a complete meal.
