Ingredients
  

  • 2 cups cottage cheese
  • 3 large eggs
  • 2 cups frozen mixed veggies peas, carrots, corn, or your favorite blend
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil for greasing the pan

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Grease a baking dish with olive oil.
  • In a bowl, mix cottage cheese, eggs, garlic powder, onion powder, salt, and pepper.
  • Add frozen mixed veggies and shredded cheddar cheese. Stir well.
  • Pour the mixture into the baking dish.
  • Bake for 30-35 minutes or until set and golden on top.
  • Let cool for 5 minutes before slicing.

Notes

  • Use fresh veggies if preferred.
  • Substitute cheddar with any cheese of your choice.
