Ingredients
  

For the Beef Stew

  • 2 pounds beef chuck or stew meat
  • 2 tablespoons oil
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon oregano
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 2 cups roasted green chiles, chopped
  • 3 cups beef broth
  • 1 cup water
  • 1 tablespoon flour, optional for thickening

Instructions
 

  • Heat the oil in a Dutch oven over medium-high heat. Add the beef and sear until browned on all sides.
  • Add the onion and garlic to the pot and cook until softened.
  • Stir in the potatoes, green chiles, beef broth, and water. Season with salt, pepper, cumin, garlic powder, and oregano.
  • Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours until the beef is tender.
  • If desired, stir in flour to thicken the stew before serving.

Notes

This stew can be served with bread or over rice for a complete meal.
