Ingredients
For the Beef Stew

beef chuck or stew meat

oil

garlic, minced

potatoes, peeled and diced

roasted green chiles, chopped

flour, optional for thickening
Instructions
Heat the oil in a Dutch oven over medium-high heat. Add the beef and sear until browned on all sides.
Add the onion and garlic to the pot and cook until softened.
Stir in the potatoes, green chiles, beef broth, and water. Season with salt, pepper, cumin, garlic powder, and oregano.
Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours until the beef is tender.
If desired, stir in flour to thicken the stew before serving.
Notes
This stew can be served with bread or over rice for a complete meal.
