Instructions
In a skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
Stir in taco seasoning and cook according to package instructions.
Meanwhile, boil or steam the sweet potatoes until tender, then drain.
Mix hot honey, paprika, garlic powder, cinnamon, salt, and pepper into the beef mixture.
To serve, layer sweet potatoes, beef mixture, cottage cheese, and avocado in bowls.
Notes
You can adjust the spice level by using more or less hot honey. This bowl is versatile; feel free to add other toppings like greens or salsa.
