Ingredients
  

For the Beef and Vegetables

  • 1 lb lean ground beef 93% preferred
  • 2 medium sweet potatoes peeled and diced
  • 1 cup cottage cheese low-fat or full-fat
  • 1 1 yellow onion diced
  • 2 tablespoon olive oil
  • 1 packet taco seasoning or 2 tablespoon homemade

For the Sauce and Seasoning

  • 2 tablespoon hot honey store-bought or homemade
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cinnamon
  • to taste salt and pepper

For Serving

  • 1 avocado sliced

Instructions
 

  • In a skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
  • Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
  • Stir in taco seasoning and cook according to package instructions.
  • Meanwhile, boil or steam the sweet potatoes until tender, then drain.
  • Mix hot honey, paprika, garlic powder, cinnamon, salt, and pepper into the beef mixture.
  • To serve, layer sweet potatoes, beef mixture, cottage cheese, and avocado in bowls.

Notes

You can adjust the spice level by using more or less hot honey. This bowl is versatile; feel free to add other toppings like greens or salsa.
