Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 avocado diced
  • 1 cup corn kernels fresh or frozen
  • 1 small red onion finely chopped
  • ½ cup cherry tomatoes halved
  • ½ cup Greek yogurt
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

  • Preheat grill to medium-high heat.
  • In a bowl, mix shrimp with olive oil, lime juice, salt, and pepper.
  • Grill shrimp for 2-3 minutes per side until pink and cooked through.
  • In another bowl, combine corn, red onion, cherry tomatoes, and avocado to make salsa.
  • Mix Greek yogurt with minced garlic to create the creamy garlic sauce.
  • Assemble bowls by placing shrimp, corn salsa, and drizzle with garlic sauce.
  • Garnish with cilantro if desired.
