Ingredients
  

For the Marinade

  • 1 lb chicken breast cut into 1-inch chunks
  • 2.5 tablespoon olive oil preferably Bertolli Extra Virgin for marinades
  • 2.5 tablespoon lemon juice
  • 2 cloves garlic freshly minced for best flavor
  • 2 teaspoon oregano
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon red pepper flakes

For the Salsa

  • 1.25 cups cucumbers diced into ½-inch pieces
  • 1 cup tomatoes seeded and diced into ½-inch pieces
  • 1 cup bell pepper
  • ¼ cup red onion finely chopped, about ¼-inch pieces
  • 2 tablespoon parsley
  • ¾ cup feta preferably Athenos Crumbled Feta
  • 1 tablespoon lemon juice
  • salt
  • pepper

For the Assembly

  • 8 pieces pitas
  • ½ cup tzatziki gives a nice creamy and rich texture

Instructions
 

  • In a mixing bowl, combine chicken, olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and red pepper flakes. Mix well and marinate for at least 15 minutes.
  • Grill the marinated chicken over medium heat for about 10 minutes or until fully cooked.
  • In another bowl, combine cucumbers, tomatoes, bell pepper, red onion, parsley, feta, and lemon juice. Season with salt and pepper.
  • Assemble the tacos by placing grilled chicken and salsa in pitas, and add tzatziki on top.

Notes

You can adjust the spice levels by adding more or less red pepper flakes based on your preference.
