Ingredients
  

For the Salad

  • 1 cup uncooked orzo
  • 2 pieces grilled chicken breasts, sliced
  • 1 ripe avocado, diced
  • ½ cup cherry tomatoes, halved
  • cup feta cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • 2 tablespoon chopped fresh cilantro or parsley
  • 1 tablespoon olive oil (for grilling chicken)
  • to taste Salt and pepper

For the Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, finely minced
  • to taste Salt and pepper

Instructions
 

  • Cook the orzo according to package instructions. Drain and set aside.
  • In a large bowl, combine the cooked orzo, grilled chicken, avocado, cherry tomatoes, feta cheese, red onion, and cilantro or parsley.
  • In a small bowl, whisk together the dressing ingredients: olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, garlic, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate for later.

Notes

You can add other vegetables or proteins according to your preference.
