For the Muffin Cups

plain Greek yogurt

rolled oats

honey or maple syrup

Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a mixing bowl, combine Greek yogurt, rolled oats, honey or maple syrup, egg, vanilla extract, baking powder, and salt. Mix well.
Fold in mini chocolate chips.
Pour the mixture into the muffin tin, filling each cup about ⅔ full.
Bake for 15 minutes or until a toothpick comes out clean.
Let cool before serving.
Notes
You can substitute the honey with maple syrup for a vegan option.
