Ingredients
  

For the Muffin Cups

  • ½ cup plain Greek yogurt
  • ½ cup rolled oats
  • ¼ cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ cup mini chocolate chips
  • 1 pinch salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a muffin tin.
  • In a mixing bowl, combine Greek yogurt, rolled oats, honey or maple syrup, egg, vanilla extract, baking powder, and salt. Mix well.
  • Fold in mini chocolate chips.
  • Pour the mixture into the muffin tin, filling each cup about ⅔ full.
  • Bake for 15 minutes or until a toothpick comes out clean.
  • Let cool before serving.

Notes

You can substitute the honey with maple syrup for a vegan option.
